I watched it live. The commentator stated that they took the
Gulfstream due to weather. Normally they would take the T-38's.

Seeing as they're on the Shuttle Landing Trainer does the pilot get to do a
practice approach?

Practicing a shuttle approach in the STA requires setting the thrust
reversers, to simulate the flying qualities of the orbiter.
Since the reason they're in the STA in the first place is weather, that
doesn't strike me as a safe thing to do.
