Will we ever see both launch pads with a shuttle at the same time
again, or are those days gone?

Unlikely.  Since all shuttle flights are going to ISS
now, there will be a forced spacing between missions
to simplify supply logistics and to match crew
transfers.

And there aren't many missions left.

If the Hubble Servicing Mission is restored, I'd wager we'll see both
pads occupied so that the next ISS mission can be on standby to rescue
the HST Servicing Shuttle, if needed.

And, if NASA gets the go-ahead to do shuttle-derived
launchers for Project Constellation, one of the pads
is likely to be taken out of commission in a year or
two for rebuilding.  Along with an MLP or two.
